This is my journey to become a healthier me. It began on January 26, 2010 and stalled out... I got a type 2 diabetes diagnosis on March 30, 2022 and started to focus on my health again. On November 8, 2022 I added Ozempic to my toolbox to help me shed some pounds and inches!

Keeps with the theme

Well, I started my day with a shortcake, so when I was looking at the list of recipes I am planning to make this week for Focus on Fruit, I thought it was a perfect time to end my day with a shortcake as well! This recipe is simple and so delicious!


Golden Pound Cake (Dessert):



Strawberry Shortcake:

1 pkg Nutrisystem Golden Pound Cake
3 tbsp light whipped cream (meeting free food requirements)
diced strawberries
1 tbsp cream cheese/ricotta cheese, if desired (even Greek yogurt could work)

Slice the strawberries thinly and leave one chunk for the top of the cake. Carefully slice the pound cake into two pieces lengthwise. Stack strawberries between the cake layers until overflowing. Top with either 1 tbsp whipped cream, or else use FF cream cheese or sweetened ricotta. Use remaining whipped cream on top, and add the strawberry chunk. Enjoy- this is a quick fix that is very light and delicious!
